This recipe is for one, but it’s easy to scale up: Just add one salmon filet, one lemon, and a few more basil leaves for each person you’re cooking for. Serves 1 6–8 oz filet wild Alaskan salmon 1 lemon, halved 3–4 basil leaves extra virgin olive oil salt and pepper
- Heat oven to 350ºF. Place a large rectangular piece of parchment onto a flat baking sheet.2. Slice one lemon half into 6 thin slices.3. Place 3 lemon slices onto center of parchment paper. Place salmon on top of lemon slices. Squeeze the juice from the remaining lemon half over the top, drizzle with olive oil, and season with salt and pepper. Place basil leaves on top of the salmon, and finally, top with remaining 3 lemon slices.4. Wrap salmon in parchment: Bring up the two long sides and roll them down towards the salmon, leaving about 1/2 inch of space at the top. Twist the two ends until tightly sealed (but leave some breathing room around salmon).5. Bake until salmon reaches desired doneness, about 14 to 15 minutes for medium or 16 to 17 minutes for well done.6. Remove from oven, unwrap parchment paper and discard along with lemon and basil.
